I Have some sage in the garden and decided to try some colby cheese and parmesan cheese white sauce with sage and some slightly crispy chopped bacon ,onion and garlic sauce and some baked mini Brussel Sprouts cut in halfs with drizzle olive oil and basimic vineger on them.
I use orecchiette pasta with this dish and when I serve this cheese sage white sauce pasta and bacon dish I add the Brussel Sprouts on top of the pasta dish when serve it just adds bit of texture and taste to the dish.
With the bacon I seem to like it slightly crispy as you can see in the video with the sauce I wanted to show you the thickness of the white cheese sage sauce when I stir it with a whip spoon you see it seperate that means it’s thick enough.
It was a beatuiful tasty creamy sage sauce and I will share this recipe and do my best to write it.

for white two type cheese
And Sage….
2 eggs whipped in a bowl
1 cup of grated Colby cheese
1/2 cup of grated parmesan cheese
2 1/2 cups of milk
Pinch of pepper
7 sage leaves
2 tablespoons of butter
2 tablespoons of Gravox cheese
Whip the eggs in a small bowl put the cheese in it a stir it in.
then get a Small saucepan on low heat, add butter, add the milk let it warm up a little then add your sage and egg cheese bowl into it make sure you use a whip spoon and stir continuously till the cheese melts away then add bit by bit with the cheese Gravox powder till it smoothes out.
Then add it to your crispy bacon and onion garlic pan with a whip spoon slowly stir on and off till it thickens then pinch of pepper.
1 Tablespoon of cooking oil
5 piece shoulder bacon cut in cubes
1/2 brown onion cut in cubes
1 pack of 500g orecchiette pasta .
300g cut in halfs mix in a bowl of 1 Tablespoon of glaze balsamic vinegar and 1 Teaspoon of olive oil put on flat baking paper on a tray and bake for 8 mins on165 D
