Sweet potato Thai patties
Super yummy with mash sweet potato, loose peas and corn and the herb is CAPE HERB AND SPICE THAI SEASONING what’s in that spice is sea salt,chilli,brown candy sugar,basil,parsley,lemon grass,black peppercorn,coriander leaves,onion, and I just put extra of dry kaffir lime leaves and fresh coriander leaves.
I Used shredded coconut and potato deb into the mix, then on the outer of the patties I used potato deb and shredded coconut then oil spray them and in the oven they go, you can have them in burgers or as a side on plate you can have chicken or meat or fish!

2 big large sweet potato
1 cup of shredded coconut
1 cup of potato deb
1 teaspoon of dry kaffir leaves
2 tablespoons of chopped fresh coriander
1 Tablespoon of CAPE HERB AND SPICE THAI SEASONING
1/4 cup of frozen peas
1/4 cup of frozen corn
FOR THE OUTER OF THE PATTIES
1/4 CUP OF POTATO DEB
1/4 CUP OF SHREDDED COCONUT
Put two sweet potatoes into a pot of water 1/4 away from the top of the sweet potatoes boil till they turn soft when finished
Drain the water out mash it up in a clean big bowl let it cool.
Add the rest of the ingredients into the bowl and mix well,
Make the round patties and put onto a baking paper on a tray spray cooking oil then in the oven on 165Degrees for 30 mins every oven is different all you have to see is when it looks light brown cooked, .
